Saw a weird boiler setup at a diner in Toledo last week
I was grabbing breakfast at this old diner in Toledo last Tuesday and noticed their boiler setup tucked behind the kitchen. It was this ancient thing, maybe from the 60s, with a bunch of copper lines running every which way like a maze. One pipe was just dangling loose, wrapped in what looked like electrical tape. I asked the waitress about it and she said the owner patched it himself because he didn't want to pay a pro. That thing must be a ticking time bomb with the pressure builds up. I almost went back there to take a closer look but my wife said to leave it alone. Has anyone else run into a homeowner special in a commercial kitchen before?

Yeah, that "ticking time bomb" part is spot on, I saw the same thing at a greasy spoon in Cleveland last month.

Did you actually SEE them dropping old grease right back into the fryer or was it more of a feeling?
