Heard a binder at the Portland show say 'real bookbinding died with hand tools' and I think that's wrong

That take misses how modern tools actually let more people try bookbinding. A cheap bone folder and some PVA glue can start a real craft. The gatekeeping over tools just pushes new folks away from learning the basics.

Honestly, my first book was bound with a butter knife and Elmer's glue.

Totally used to be a tool snob myself, but you're right! Making stuff should be about getting started, not having perfect gear.
