Just switched from PVA to wheat paste on my second book and wow

I bound my first book with PVA glue from the craft store and the spine cracked after two days of reading. Last weekend I tried wheat paste cooked in a double boiler, just flour and water, and the pages move so much better and nothing is stiff. Is there a reason more people don't use paste on the spine, or is it just the wait time that scares folks off?
