Appreciation post: I finally stopped using my old way to check if oil is hot enough

For years I'd flick water into the pan, but after a bad splatter burn in my Portland kitchen last month, I switched to using the handle of a wooden spoon and seeing the bubbles form, which is way safer and just as accurate, right?

Old habits die hard, but sometimes painfully.

Read a cookbook that said the wooden spoon trick is the pro move for testing oil. Seems like the smart way to go.

It's funny how we stick to the risky methods for so long. The safer option is usually right there, just feels less legit somehow.
