Four hours to peel eight pounds of shallots

I needed a mountain of minced shallots for a sauce last Saturday. Figured I'd knock it out in 20 minutes. Four hours later I was still standing at the same cutting board with burning eyes and sticky fingers. The trick I missed was starting the prep with a 10 minute soak in warm water to loosen the skins. Has anyone else found a better shortcut for shallot prep?

Freeze the shallots for 15 minutes before peeling. The skins practically fall off and the crying stops.
