Just spent $50 on a decent boning knife and it saved me hours of prep time

I used to use the same $10 knife for everything. Got tired of fighting with chicken thighs and picked up a Victorinox Fibrox on a whim. First time breaking down a whole chicken felt like cheating. Anyone else put off getting the right tool and regret it?

Oh man, my friend Sarah went through this exact thing last year! She was using this dull old chef's knife for everything, even trying to debone salmon with it. Finally her brother got her a decent 8-inch slicing knife for her birthday and she texted me a photo of her perfectly trimmed chicken breasts with "WHY DID I WAIT SO LONG?" in all caps. She still talks about how much easier meal prep is now, like it changed her whole cooking game.
