Knocked over a 5-gallon stockpot of veal stock yesterday
Honestly I was so annoyed at myself. I had just spent 6 hours roasting bones and simmering that stuff down. It was right at the end when I was straining it and my elbow caught the handle. Splashed all over the floor and my shoes. About 3 quarts lost before I got it under control. Cleanup took 45 minutes and I had to start over from scratch. How do you guys handle those moments when you just want to throw your apron in the trash?

That reminds me of a friend who used to work at a high end place downtown. She spent an entire Saturday making a big batch of lobster bisque from scratch. Right before service started, a server backed into the stove and knocked the whole pot over. She said she stood there in the middle of the kitchen with soup all over her clogs and just started crying. Her chef told her to take a walk around the block before she even thought about cleaning it up. She came back, dealt with the mess, and started a new batch that same night. Sometimes you just have to step away for a few minutes before you can face it again.

Yep, sometimes the smartest thing you can do is just walk away for a minute before your brain explodes.
