Raspberry jam hack from yesterday's shift

I was slammed on the dessert station and needed a quick fruit compote. I just mashed frozen raspberries with a bit of sugar and lemon juice straight from frozen; it made a perfect, bright jam in minutes. Do you all have any other fast fruit tricks for a busy line?

Yeah, frozen fruit is such a timesaver. I'll puree frozen mango with lime juice for a quick coulis, and sometimes toss in a few basil leaves for a weirdly good twist. You ever experiment with herbs like that?

My friend got wild with a bag of frozen cherries last summer. She blended them with a splash of orange juice and threw in a whole sprig of rosemary, stems and all. It tasted like some fancy dessert from a restaurant, but we were just eating it on her porch in pajamas. She does stuff like that all the time, like thyme with peaches. It always sounds weird but ends up being good.
