That $800 knife set I bought my new line cook was a total bust
Bought a nice 8-piece set from a fancy brand for my new guy three weeks ago. He left them in a bus tub overnight and two tips snapped off. $800 down the drain and he quit the next day. Anyone else stopped buying nice gear for new hires?

Did you read that article about restaurants switching to cheaper gear on purpose after too many walkouts? Seems like the math checks out when $800 walks out the door with a guy who can't even bus his own knives. Maybe pass on the fancy stuff until they prove they'll stick around.
