That trick with resting meat in butter I keep seeing on TikTok is driving me crazy
It's not the butter that does anything, it's just melting off and pooling on the cutting board. I had a line cook at our place in Richmond try this on a ribeye last week, and we ended up just wiping the board down and resalting. Anyone else notice people treating butter like it's going to fix a bad sear or something?

Yeah, that butter nonsense drives me up a wall too, it just makes a greasy mess and does nothing for the sear.

Doesn't it drive you nuts when people act like butter is some kind of magic fix for a bad sear? Ngl, I tried it once with some chicken thighs at home and all it did was make a mess on my cutting board. Honestly the best way to get a good crust is just a hot pan and patience, not a pat of butter floating off into the void.
