My KitchenAid sat in the corner for a solid year before I figured out the same thing. Good call on swapping the paddle, it makes a world of difference. For cookies and cakes, that machine is a total workhorse with no complaints. But bread dough really tests what it can handle.

inHad to decide between staying in my hometown in Hunan or moving to Shenzhen for a job offer. Took the Shenzhen gig. Six months in and I'm just drained by the rent and the pace.
That rent in Shenzhen is like a whole extra job on its own.

inShoutout to that butcher shop in Portland with the old school band saw
My buddy Mike lost the tip of his left index finger on a 2018 model saw with all the "modern safety features." He was cutting pressure treated lumber in his backyard, the blade grabbed, and it pulled his hand right past the kickback guard. Took two surgeries just to get the nail bed back to something normal looking. So I guess modern saws are safer, but they still bite.
