Shoutout to the random auntie at the wet market in Guangzhou

I always rinsed rice 3 or 4 times until the water ran clear, thought that was proper. One morning this older lady at the stall grabbed my arm and said I was washing away all the goodness, she only does 2 quick swirls. Has anyone else been told they over-rinse rice and actually noticed a difference in texture?

Water's just water, man, and rice is pretty forgiving either way. I doubt anyone's taste buds are refined enough to call the difference between three rinses and two.
