Stale beans almost made me quit home roasting

I spent 3 weekends chasing a sour taste in my cups, then realized my beans were going stale in 8 days because my mason jar let air in. Switched to a vacuum canister and the difference was night and day, anyone else fight this battle before figuring out storage?

Mason jars letting air in, who knew, right up there with finding out coffee has an expiration date.
