Tried making cold brew with pickle juice instead of water... it did not go well.

That blog post used leftover brine, which has a lot of sediment. A cleaner pickle juice from the fridge section might not curdle as badly, but the acidity would still wreck the flavor. You'd get a super sour, salty coffee that just tastes like mistakes. Some experiments are better left as funny thoughts.

Actually, I've seen it work fine with cold brew. The acidity isn't that different from some fancy coffee notes. Elliot_hall62 is right about the sludge with hot coffee, but cold changes the game. It's a weird salty kick that's not for everyone, but it's not always a mistake.

Saw a food blog where someone tried that with leftover pickle brine from a jar. They said the vinegar totally curdled the coffee grounds... made a weird, sludgy mess. Honestly not surprised it turned out bad.
