I keep seeing crews in my town set posts with barely any gravel in the bottom of the hole... like a handful at most. They pack the concrete right on the dirt. My old boss in Tampa would fire you for that. But some guys say it's fine if the soil drains well. What's your take?

Yeah, that's the "hope it doesn't rain" method of construction. Your old boss had the right idea.

That's just asking for a sinkhole. Gravel gives the water somewhere to go so it doesn't wreck the concrete from below. Good drainage today doesn't mean good drainage in five years after the soil changes. Your old boss knew cutting that corner would cost way more later.
