Tried a glass weight vs a cabbage leaf for keeping kraut under brine.

I used a big glass weight in one jar and a folded cabbage leaf in another for my last batch of sauerkraut. The jar with the leaf got mold on top after about a week, but the one with the weight stayed clean for the full three week ferment. Does anyone have a better method that's not a weight? They're just so bulky to store.

I read about using a small ziplock bag filled with brine as a weight. It molds to the jar shape and is easy to store flat. The brine inside means if it leaks it won't ruin your ferment's salt balance.

A ziplock bag full of brine can actually leak? That's a terrifying thought (and a huge mess waiting to happen).
