My sister told me my chicken wings were rubbery and I finally figured out the trick

She said I was overcrowding the basket and not patting them dry first, so now I do 6 wings at a time at 380 for 12 minutes flip and another 8 and they come out crispy every time has anyone else had to adjust their batch sizes like that?

@shanel13 I used to think you could just throw in a whole basket full and be fine, but nope. I tried doing like 10-12 at once and they'd steam instead of crisp, total disaster. Now I do 6 at a time like the OP and it's a game changer. The flip at the halfway point and the higher temp (380 vs my old 350) really locks in that crunch. My husband actually said "these are better than takeout" last week which was a huge win.
