Dumpling night: hand-folded vs. store-bought wrappers, which side are you on?
For our lunar new year dinner in Shenzhen, my aunt swore homemade wrappers were the only way, took us 4 hours to roll and fold. I pushed for the packaged ones from the corner market, figured the filling is what matters. We did half and half, and honestly the store-bought held up better in the broth, but hers had that chewy texture. What's your non-negotiable when making jiaozi at home, the wrapper or the filling?
