Update: I just found out how many people still use Windows 7 and it blew my mind
I was reading a report from a security company last week, and they said about 5% of all Windows PCs are still running Windows 7. That's one in twenty machines. I work in a small shop in Toledo, and I see maybe one a month, so I thought it was basically gone. But the report said that's millions of computers worldwide. It made me think about all the old office machines and point-of-sale systems out there that never get updated. The security risks are huge, but some businesses just won't let go of old software that 'works'. How do you guys handle a client who refuses to upgrade from an unsupported OS? Do you just walk away from the job?

Heard some banks still run ancient systems for ATMs.

That's a solid point from mark676. People forget those old systems are often air-gapped from the internet, which is a huge security plus. Sometimes old and boring is the safe play.
