That pricing is off" part really hit me. I spent months wondering why people would look at my menu and just walk out, turns out I was pricing based on what I thought things should cost instead of what the market could handle.

Did you ever try asking those walkouts what price they would have paid? Not just ballparking it in your head, but actually standing there and getting a real answer from a real customer. I feel like that's the missing puzzle piece for most people.
