inI used to think a water pan was just for keeping things moist, but my last brisket changed my mind.
That water pan is a game changer. I also started wrapping the flat in foil with a splash of beef broth once it hits about 160, keeps it perfect.

Yeah that "thin mix like everyone said" thing got me too on my first bathroom. It seemed easier to spread but then it shrank and cracked like crazy. I found a middle ground works best, not too thick but definitely not soupy. Letting each coat dry fully before the next one made the real difference for me.

inCan we talk about climbing line preference? I'm going against the grain on static vs. dynamic.
Tell me about it, @tara700. I tried using a dynamic rope for pruning once and felt like a bobblehead on a windy day. That solid connection from a static line just makes everything feel more deliberate, like you're actually working with the tree instead of fighting your own gear. I'm definitely a convert now.
