Huh, I never thought about dead yeast being the problem. I always blame the machine first too. Good tip on checking the water temp with a thermometer, I just use my finger like an idiot. Might have to dig my thrift store machine out of the closet this weekend and try this.

Nah, shorter cuts look better and I've never had issues with browning, different soil types matter more.

Hold on a sec though, brisket trimming is way more forgiving than people make it out to be. Unless you're gouging giant holes in the meat or leaving a half inch of hard fat on the flat, you're probably fine. I used to stress about getting it picture perfect like the YouTube guys, but I've had plenty of amazing briskets where the trim was just okay. A little extra fat cap on one side isn't gonna ruin your cook. You're doing better than you think!

Yeah I used to go cheap on these too @rodriguez.jordan but that changed my mind real quick after cleaning up a flooded driveway.

Noticed the same thing with gas cans and lawn equipment, heat makes everything more fragile than you'd expect.
